Black garlic is a cured garlic produced by heating whole garlic bulbs (Allium sativum). The garlic smell and aromas will change almost entirely depending on the heating time. Its flavor depends on that of the fresh garlic from which it was made. Garlic with a higher sugar content produces a milder, more caramel-like aroma, while garlic with a lower sugar content produces a sharper, slightly more acidic flavor similar to tomato paste. Black garlic even has chocolate and coffee flavors and a high level of umami, the fifth taste (the four basic tastes are salty, sweet, sour, and bitter). Furthermore, black garlic is considered even healthier than regular fresh garlic due to its high concentration of antioxidants. Black garlic, and its pearls, are almost universally used in cooking.
