Pedro Ximénez is obtained from the ripe grapes of the same name which are dried in the sun to obtain a must with an exceptionally high concentration of sugar but also with some natural acidity. A dark, ebony colored wine has an extremely rich bouquet with predominantly sweet notes of raisins and figs, and at the same time reminiscent of toasted coffee, dark chocolate, cocoa and liquorice.
